Barlow's Blackend Catfish

Ingredients:
  • 2 tsp cayenne pepper
  • 2 tsp lemon pepper
  • 2 tsp garlic powder
  • 2 tsp salt
  • 2 tsp pepper
  • 1 lb catfish filets
  • 2 tbsp butter
  • 1 cup Italian salad dressing

Instructions:
  1. Preheat oven to 350 degrees F and lightly grease a medium baking dish
  2. In a shallow medium bowl, mix cayenne pepper, lemon pepper, garlic powder, salt, and pepper
  3. Brush both sides of the catfish fillets with butter.  Rub with the spice mixture on both sides
  4. Heat a large heavy skillit over medium-high heat until hot.  Add fillets and fry approximately 2 minutes on each side,until slightly blackened (open your windows when blackening the catfish!)
  5. Arrange blackened fillets in single layer in baking dish and cover with Italian dressing.
  6. Bake 30-35 minutes, until fish flakes easliy with fork
