Southern-style Oven-fried Catfish

Ingredients:
- 3 tbsp vegetable oil
- 1-1/2 lbs catfish fillets, cut into serving pieces
- 1 cup cornmeal
- 2 tsp Creole seasoning
- 1 tsp paprika
- 1 tsp sugar
- 1/2 tsp fresh ground black pepper
- 2 eggs, lightly beaten
- 1 tbsp hot pepper sauce
Instructions:
- Preheat oven to 425 degrees F and grease a 13 X 9 glass baking dish with the oil.
- Rinse the catfish and pat dry.
- In a shallow bowl, combine the cornmeal, creole seasoning, paprkia, sugar, and black pepper.
- Combine the eggs and hot sauce in another bowl.
- Dip the catfish fillets in the egg mixture, dredge in the cornmeal mixture, then arrange in the baking dish.
- Bake for 15 minutes (or until cooked through and golden brown), turning once.
- Place cooked catfish on paper-towel lined plate and serve immediately with additional hot sauce.
Notes:
I like to use Tiger Sauce as the hot sauce.
This recipe also works well with other kind of white fish (tilapia, cod, etc.).
