Southern-style Oven-fried Catfish

Ingredients:
  • 3 tbsp vegetable oil
  • 1-1/2 lbs catfish fillets, cut into serving pieces
  • 1 cup cornmeal
  • 2 tsp Creole seasoning
  • 1 tsp paprika
  • 1 tsp sugar
  • 1/2 tsp fresh ground black pepper
  • 2 eggs, lightly beaten
  • 1 tbsp hot pepper sauce

Instructions:
  1. Preheat oven to 425 degrees F and grease a 13 X 9 glass baking dish with the oil.
  2. Rinse the catfish and pat dry.
  3. In a shallow bowl, combine the cornmeal, creole seasoning, paprkia, sugar, and black pepper.
  4. Combine the eggs and hot sauce in another bowl.
  5. Dip the catfish fillets in the egg mixture, dredge in the cornmeal mixture, then arrange in the baking dish.
  6. Bake for 15 minutes (or until cooked through and golden brown), turning once.
  7. Place cooked catfish on paper-towel lined plate and serve immediately with additional hot sauce.

Notes:

I like to use Tiger Sauce as the hot sauce.

This recipe also works well with other kind of white fish (tilapia, cod, etc.).
