Ingredients:
- 4 center cut pork chops (not too thick)
- 1 red pepper
- 1 green pepper
- 1 yellow pepper
- 2 teaspoons canola oil
- 1/2 cup finely chopped onion
- 2-3 minced garlic cloves
- 1 teaspoon ground cumin
- 2 Tablespoons red wine vinegar
- 1/2 cup chicken broth
- 1/2 cup crushed tomatoes
- 1 bay leaf
- For garnish: chopped parsley
Instructions:
- Heat the oil in a large skillet. Sprinkle the chops with salt and pepper.
- Add the chops in a single layer and cook about 4 minutes per side (depending on their thickness).
- While the chops are browning, core and seed the peppers. Cut them into thin strips.
- When the chops have finished cooking, pour off the fat. Add the onions and garlic to the chops and cook, stirring occasionally until the onions are wilted.
- Add the peppers and cumin and cook for 1 minute.
- Add the vinegar, chicken broth, tomatoes and bay leaf. Cover and cook on low for 20 minutes.
- Serve hot, garnished with parsley
