Pork Chops with Multi-Colored Peppers

Ingredients:
  • 4 center cut pork chops (not too thick)
  • 1 red pepper
  • 1 green pepper
  • 1 yellow pepper
  • 2 teaspoons canola oil
  • 1/2 cup finely chopped onion
  • 2-3 minced garlic cloves
  • 1 teaspoon ground cumin
  • 2 Tablespoons red wine vinegar
  • 1/2 cup chicken broth
  • 1/2 cup crushed tomatoes
  • 1 bay leaf
  • For garnish: chopped parsley

Instructions:
  1. Heat the oil in a large skillet. Sprinkle the chops with salt and pepper.
  2. Add the chops in a single layer and cook about 4 minutes per side (depending on their thickness).
  3. While the chops are browning, core and seed the peppers. Cut them into thin strips.
  4. When the chops have finished cooking, pour off the fat. Add the onions and garlic to the chops and cook, stirring occasionally until the onions are wilted.
  5. Add the peppers and cumin and cook for 1 minute.
  6. Add the vinegar, chicken broth, tomatoes and bay leaf. Cover and cook on low for 20 minutes.
  7. Serve hot, garnished with parsley
