Slow Cooker Lamb Stew

Ingredients:
  • 2-1/2 cups chicken or vegetable stock
  • 3 carrots, peeled and sliced
  • 2 onions, sliced
  • 2-3 celery stalks, sliced
  • 1 lb potatoes, cubed
  • 2 lbs lamb, cubed (remove as much fat as possible)
  • 1 tsp basil
  • 1 tsp thyme
  • black pepper to taste
  • salt to taste
  • Finely chopped parsley to garnish

Instructions:
  1. Put all ingredients except for stock and spices into the crock pot and mix. 
  2. Boil the stock in a saucepan and add the spices
  3. Pour boiling stock into the crock pot and cook on low for 7 - 9 hours
