Ingredients:
- 2-1/2 cups chicken or vegetable stock
- 3 carrots, peeled and sliced
- 2 onions, sliced
- 2-3 celery stalks, sliced
- 1 lb potatoes, cubed
- 2 lbs lamb, cubed (remove as much fat as possible)
- 1 tsp basil
- 1 tsp thyme
- black pepper to taste
- salt to taste
- Finely chopped parsley to garnish
Instructions:
- Put all ingredients except for stock and spices into the crock pot and mix.
- Boil the stock in a saucepan and add the spices
- Pour boiling stock into the crock pot and cook on low for 7 - 9 hours
