Sweet-and-Sour Cucumbers with Fresh Dill

Ingredients:

2 cucumbers (1-1/2 lbs total), unpeeled and thinly sliced

1 tbsp coarse sea salt

1/2 cup distilled white vinegar

1/4 cup finely chopped fresh dill

3 tbsp sugar
-
1/2 tsp freshly ground black pepper
Instructions:

Place cucumber slices in collander and coat with salt.

Let stand 15 minutes, stirring occasionally

While cucumbers are standing, mix vinegar, dill, sugar, and pepper in a large bowl until sugar is dissolved
-
Drain cucumbers well and pat dry.

Add cucumbers to liquid and stir to blend. Refridgerate at least 15 minutes before serving.
