Sweet-and-Sour Cucumbers with Fresh Dill

Ingredients:
  • 2 cucumbers (1-1/2 lbs total), unpeeled and thinly sliced
  • 1 tbsp coarse sea salt
  • 1/2 cup distilled white vinegar
  • 1/4 cup finely chopped fresh dill
  • 3 tbsp sugar
  • 1/2 tsp freshly ground black pepper

Instructions:
  1. Place cucumber slices in collander and coat with salt.
  2. Let stand 15 minutes, stirring occasionally
  3. While cucumbers are standing, mix vinegar, dill, sugar, and pepper in a large bowl until sugar is dissolved
  4. Drain cucumbers well and pat dry.
  5. Add cucumbers to liquid and stir to blend.  Refridgerate at least 15 minutes before serving.
