Ingredients:
- 3 or 4 ripe bananas, smashed
- 1/3 cup melted butter
- 1 cup sugar
- 1 egg, beaten
- 1 tsp vanilla
- 2 tsp baking powder
- pinch of salt
- 1-1/2 cups all-purpose flour
Instructions:
- Preheat oven to 350 degrees F and lightly grease a loaf pan
- Use a wooden spoon to mix butter and bananas in a large mixing bowl
- Mix in the sugar, egg, and vanilla
- Sprinkle with the salt and baking soda, and mix well
- Add the flour and mix thoroughly
- Pour into the loaf pan and bake for 1 hour
- Cool on a rack, removing from pan when it has cooled down enough.
