Orange and Ale Vinaigrette

Ingredients:
  • 3 oz India Pale Ale (1/4 bottle - drink the rest!)
  • 1 tbsp minced shallot
  • 1 tsp grated orange zest
  • 1 tbsp honey
  • 1 tsp dijon mustard
  • 4 tbsp extra virgin olive oil
  • salt and pepper to taste

Instructions:
  1. In a small bowl, whisk the beer, shallot, orange zest, honey, and dijon mustard until mixed. 
  2. Gradually add the olive oil, whisking constantly
  3. Season with salt and pepper
  4. Toss with bitter greens, pecans, and orange segments
