Juanita's American Coleslaw

Ingredients:

 

Vegetables
  • 1 pound Cabbage, shredded
  • 1/4 pound Carrot, julienne
  • 1 Onion, medium size, finely chopped
  • 2 Chile Peppers, finely chopped (Optional)
 
Dressing
  • 1/2 cup Mayonaise 
  • 1 tablespoon Vinegar
  • 2 teaspoons Sugar
  • 1/4 teaspoon Salt

Instructions:

 

  1. Prepare the Dressing
  2. Finely chop the Onion and the optional Chilies and mix into the Dressing, set aside
  3. Shred Cabbage and Carrot (if not bought already shredded) and dump in a large non-reactive bowl
  4. Pour Dressing over Cabbage and Carrot in bowl, and mix well
  5. Serve cold 

Notes:

 I modified this from the original and listed the chilis as optional because Anju accidentally left them out the first time she made it, and the coleslaw was still excellent.
