Tortilla-Encrusted Oven-Fried Catfish

Ingredients:

3 tbsp vegetable oil

4 catfish fillets (about 1 lb), cut into serving pieces

1 cup flour
-
tortilla chips (eough for 2 cups crushed)

Salt to taste

1/2 tsp fresh ground black pepper

2 eggs, lightly beaten
-
1 tbsp hot pepper sauce
Instructions:

Preheat oven to 425 degrees F and grease a 13 X 9 glass baking dish with the oil.

Rinse the catfish and pat dry.

Sprinkle fillets with salt and pepper

Put the flour in a shallow bowl

Combine the eggs and hot sauce in another shallow bowl.

Crush the tortilla chips In one final shallow bowl

Dip the catfish fillets in the flour to coat them, then in the egg mixture, and finally in the tortilla chips, then arrange in the baking dish.

Bake for 15 minutes (or until cooked through and golden brown), turning once.

Place cooked catfish on paper-towel lined plate and serve immediately with additional hot sauce.
