Hashed Brown Potatoes

Ingredients:
  • 2 baked potatoes
  • Salt (to taste)
  • Pepper (to taste)
  • 1 tbsp olive oil

 


Instructions:
  1. Peel the baked potatoes and chop into small pieces
  2. Heat the oil in a large fry pan
  3. Add the potato and spread out to cover the bottom of the pan
  4. Add the salt and pepper
  5. Cook on one side until browned
  6. Split into two or four pieces and flip (or, you can try to flip the entire pan, but I have not had great success with this.
  7. Cook the other side until browned
  8. Serve hot

Notes:

I found this recipe in an article about traditional hash browns - they were typically made with leftovers from the previous night's dinner.
