Bacon-wrapped Stuffed Jalapeno Peppers

Ingredients:
  • Jalapeno Peppers
  • Bacon (two slices per pepper)
  • Cream Cheese (4 tsp per pepper)

Instructions:
  1. preheat oven to 375 F
  2. Cut peppers in half and remove seeds and other "guts"
  3. Put 2 tsp of cream cheese in each pepper half
  4. Wrap with bacon
  5. Put in oven until bacon is cooked (about 20 - 25 minutes)

Notes:

These can also be cooked on the grill.

Number served is based on 1 pepper, but this is an easily expandable recipe.

With turkey bacon or Applegate Farms Organic Uncured Bacon, each serving (2 half peppers) is about 142 calories. Other bacons may be higher (for example Kirkland bacon is 45 calories per slice, so it would add 30 total calories to the dish).

If you use 1/3 less fat cream cheese, the calories reduce to 116. I tried this, but the cream cheese does not act as nicely as the full fat version, and it's only about 20 more calories per serving.
