Ingredients:
- 1-1/2 cups all-purpose flour
- 3-1/2 tsp baking powder
- 1/2 tsp salt
- 1 tbsp white sugar
- 1-1/4 cups milk
- 1 egg
- 2 tbsp butter, melted
Instructions:
- Sift the dry ingredients together into a large bowl.
- Make a well in the center of the dry ingredients and add the milk, eggs, and butter
- Mix until smooth
- Heat a lightly oiled griddle or frying pan over medium-high heat Pour batter onto the griddle in 1/4 cup batches.
- Brown on both sides and serve hot
Notes:
For blueberry pancakes, add about 1/2 cup of fresh blueberries to the batter before cooking.
The calorie count assumes whole milk and an extra-large egg. If you use skim milk, you can shave off about 7 calories per pancake.
The original recipe says that it makes 8, but I always get 9 quarter-cup pancakes from a batch of batter.
