Ingredients:
- 8-10 ounces boneless, skinless, chicken breast, cut into chunks
- 2 medium carrots, sliced
- 2 large celery stalks, sliced
- 1 broccoli crown, cut into florets
- 1 medium white onion, coarsley chopped
- 1 medium green pepper, coarsley chopped
- 2 cloves garlic, minced
- 1" thick piece of ginger, minced
- 2 tbsp peanut oil
- 1 batch Stir Fry Sauce
- Fresh ground pepper, to taste
- 1/4 tsp garlic powder (optional)
- 1/4 tsp ginger powder
Instructions:
- Heat the oil over medium heat in a wok and add the minced garlic and ginger
- When the garlic is sizzling, add the onion and sautee for a few minutes
- Add the carrots and celery and continue sauteeing for a few more minutes
- Add the green pepper and broccoli and sautee until the vegetables are almost done. Season with pepper.
- Push the vegetables up the side of the wok to make space in the center. Add the chicken and stir fry until all sides are white
- sprinkle the ginger and garlic powder on the chicken and mix. Add ground pepper as well.
- Continue sauteeing the chicken, and mix in the vegetables when the fat has mostly dissapated.
- Add the stir-fry sauce, mix well, reduce heat, cover, and let the flavors blend for about 5 minutes.
- Serve hot.
Notes:
This recipe is great for two people, however it can also work for 4 depending on what it is served with.
