Chicken Stir Fry

Ingredients:
  • 8-10 ounces boneless, skinless, chicken breast, cut into chunks
  • 2 medium carrots, sliced
  • 2 large celery stalks, sliced
  • 1 broccoli crown, cut into florets
  • 1 medium white onion, coarsley chopped
  • 1 medium green pepper, coarsley chopped
  • 2 cloves garlic, minced
  • 1" thick piece of ginger, minced
  • 2 tbsp peanut oil
  • 1 batch Stir Fry Sauce
  • Fresh ground pepper, to taste
  • 1/4 tsp garlic powder (optional)
  • 1/4 tsp ginger powder

Instructions:
  1. Heat the oil over medium heat in a wok and add the minced garlic and ginger
  2. When the garlic is sizzling, add the onion and sautee for a few minutes
  3. Add the carrots and celery and continue sauteeing for a few more minutes
  4. Add the green pepper and broccoli and sautee until the vegetables are almost done. Season with pepper.
  5. Push the vegetables up the side of the wok to make space in the center. Add the chicken and stir fry until all sides are white
  6. sprinkle the ginger and garlic powder on the chicken and mix. Add ground pepper as well.
  7. Continue sauteeing the chicken, and mix in the vegetables when the fat has mostly dissapated.
  8. Add the stir-fry sauce, mix well, reduce heat, cover, and let the flavors blend for about 5 minutes.
  9. Serve hot. 

Notes:

This recipe is great for two people, however it can also work for 4 depending on what it is served with.
