Ingredients:
Muffins:
- 1-1/2 cups all purpose flour
- 3/4 cup white sugar
- 1/2 tsp salt
- 2 tsp baking powder
- 1/3 cup vegetable oil
- 1 egg
- 1/3 cup milk
- 1 cup fresh blueberries
Crumble:
- 1/2 cup white sugar
- 1/3 cup all purpose flour
- 1/4 cup butter, cubed
- 1-1/2 tsp ground cinnamon
Instructions:
- Preheat oven to 400 degrees F
- Combine dry muffin ingredients
- Pour vegetable oil into a one-cup measure, then add the egg. Add milk to make 1 cup total of liquid
- Mix this with the flour mixture
- Fold in blueberries
- Either grease a muffin pan or use paper liners. Pour batter into muffin cups, all the way to the top.
- Put crumble ingredients into a small bowl and mix with fork. Sprinkle over muffins
- Bake for 20 - 25 minutes, or until done.
Notes:
I ended up only using about 2/3 of the crumble for the muffins.
