Blueberry Muffins

Ingredients:

Muffins:

  • 1-1/2 cups all purpose flour
  • 3/4 cup white sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 cup fresh blueberries

Crumble:

  • 1/2 cup white sugar
  • 1/3 cup all purpose flour
  • 1/4 cup butter, cubed
  • 1-1/2 tsp ground cinnamon

Instructions:
  1. Preheat oven to 400 degrees F
  2. Combine dry muffin ingredients
  3. Pour vegetable oil into a one-cup measure, then add the egg. Add milk to make 1 cup total of liquid
  4. Mix this with the flour mixture
  5. Fold in blueberries
  6. Either grease a muffin pan or use paper liners. Pour batter into muffin cups, all the way to the top.
  7. Put crumble ingredients into a small bowl and mix with fork. Sprinkle over muffins
  8. Bake for 20 - 25 minutes, or until done. 

Notes:

I ended up only using about 2/3 of the crumble for the muffins.
