Ingredients:
- 1 box Betty Crocker Super Moist Spice Cake Mix
- 1 can pumpkin (15 oz)
- 2 egg whites (optional)
Instructions:
- Preheat oven to 350 F
- If using egg whites, beat until frothy
- Mix the cake mix and pumpkin in a bowl (with the egg whites if using)
- Put in muffin cups and bake for 20-25 minutes
Notes:
The egg whites make the muffins a bit fluffier.
You can use different types of cake mix for this recipe. I've only tried the spice mix, but I read that carrott cake mix and yellow cake mix both work well.
