Ingredients:
- 1 package (16 oz) frozen green beans
- 1 medium yellow onion, chopped
- 1 garlic clove, minced
- 1 tsp butter
- 1/2 lb fresh mushrooms, chopped
- 1 can (12 oz) fat free evaporated milk
- 1/4 cup all purpose flour
- 1/2 cup milk
- 1 tsp soy sauce
- 1/2 tsp salt
- 1/4 tsp poultry seasoning
- 1/4 tsp fresh ground pepper
Topping:
- 2 cups sliced onions
- 1 tsp butter
- 1/2 cup plain bread crumbs
Instructions:
- Cook beans until tender and drain
- Preheat oven to 375
- In a large nonstick skillet, cook onion and garlic in the butter until tender (about 4 minutes), then add mushrooms and cook intil softened.
- Reduce heat to medium-low , gradually stir in evaporated milk.
- Combine flour and milk and mix until smooth, then gradually stir into mushroom mixture.
- Add the soy sauce, salt, poultry seasoning, and pepper. Bring to a boil and cook, stirring constantly, until thickened (about 2 minutes).
- Stir in beans and transfer to a 2 quart greased baking dish
- Bake uncovered for 15 minutes
Topping:
- While the casserole is baking, cook onions in butter in a small, nonstick skillet over medium-low heat until golden brown
- Add bread crumbs and cook until dry and golden brown
- Sprinkle over casserole at the end of the 15 minutes, and bake for about 7-10 minutes, until the topping is browned.
- Let stand for 10 minutes then serve
