Ingredients:
- 3 tbsp butter
- 3 tbsp flour
- 1/2 tsp salt
- fresh ground black pepper to taste
- 1-1/2 cups milk
- 4 oz (about 1 cup) grated sharp cheddar cheese (can also use smoky cheddar)
Optional:
- 3 scallions, sliced
- 1 tsp butter
Instructions:
- Melt butter and remove from heat
- Stir in flour and seasonings
- Gradually add milk, stirring until well mixed
- Cook over low heat, stirring constantly until thickened and smooth
- Cook for 5 minutes longer, then add cheese and stir util smooth and welll blended
- If you are adding scallions, sautee them in the 1 tsp butter and add to finished sauce
Notes:
This is a great basic cheese sauce that goes with pretty much anything where cheese is good. I made it for broccoli, but the next day I put it on a chicken breast for a sandwich. It also makes a good base for Macaroni and Cheese.
