Turnip Cassarole

Ingredients:
  • 1 lb purple top turnips
  • 1 package cream cheese
  • 4 oz (1 cup) grated sharp cheddar cheese
  • 4 tbsp butter
  • 2 eggs (beaten)
  • 1/2 tsp salt
  • 1 tsp pepper
  • paprika
  • 1/4 cup bread crumbs (plain or italian seasoned)
  • 1 medium onion (grated)

Instructions:
  1. Preheat oven to 350 degrees F.
  2. Boil or steam the turnips until soft, then mash them
  3. Add the cream cheese, butter, eggs, onion, salt, pepper, 3/4 of the cheddar cheese and mix well
  4. Top with the last 1/4 of the cheddar and the bread crumbs. then sprinkle with paprika
  5. Bake for 30 minutes
