Mashed Potatoes

Ingredients:
  • 2 lbs potatoes, peeled and cut into 2" cubes
  • 1/2 cup (or more, as desired) very hot milk
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 tbsp butter

Instructions:
  1. Steam the potatoes in 1" unsalted boiling water until very soft (about 25 minutes)
  2. Drain thoroughly and put over very low heat to dry them out
  3. Put potatoes in heatproof bowl and immediately beat with an electric mixer for several minutes
  4. add the milk, a little at a time, continuing to beat
  5. Add the baking powder and salt, and beat until just light
  6. Add butter, gently mix, and serve

Notes:

These are really light, fluffy and smooth
