Ingredients:
- 2 lbs potatoes, peeled and cut into 2" cubes
- 1/2 cup (or more, as desired) very hot milk
- 1 tsp baking powder
- 1 tsp salt
- 2 tbsp butter
Instructions:
- Steam the potatoes in 1" unsalted boiling water until very soft (about 25 minutes)
- Drain thoroughly and put over very low heat to dry them out
- Put potatoes in heatproof bowl and immediately beat with an electric mixer for several minutes
- add the milk, a little at a time, continuing to beat
- Add the baking powder and salt, and beat until just light
- Add butter, gently mix, and serve
Notes:
These are really light, fluffy and smooth
