Ingredients:
- 1 lb Collard Greens, chopped into 2" pieces
- 3 or 4 slices bacon (or turkey bacon)
- 1 large red onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1 tsp fresh ground pepper
- 3 cups chicken broth
- Dash of red pepper flakes
- 1 tbsp tiger sauce (or other hot sauce if you prefer)
Instructions:
- Heat the oil in a large pot over medium-high heat. Add bacon and cook until it is crisp.
- Remove bacon and crumble, then add back to pan along with onions
- Cook the onions until they are tender (about 5 minutes).
- Add garlic and cook until just fragrant
- Add collard greens and sautee until just wilted.
- Add chicken broth, salt, pepper, red pepper flakes, and tiger sauce.
- Bring to boil and simmer for 45 minutes, or until the greens are tender.
- Serve hot.
Notes:
Calories are based on 4 slices of turkey bacon.
