Collard Greens

Ingredients:
  • 1 lb Collard Greens, chopped into 2" pieces
  • 3 or 4 slices bacon (or turkey bacon)
  • 1 large red onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp fresh ground pepper
  • 3 cups chicken broth
  • Dash of red pepper flakes
  • 1 tbsp tiger sauce (or other hot sauce if you prefer)

Instructions:
  1. Heat the oil in a large pot over medium-high heat. Add bacon and cook until it is crisp.
  2. Remove bacon and crumble, then add back to pan along with onions
  3. Cook the onions until they are tender (about 5 minutes).
  4. Add garlic and cook until just fragrant
  5. Add collard greens and sautee until just wilted.
  6. Add chicken broth, salt, pepper, red pepper flakes, and tiger sauce.
  7. Bring to boil and simmer for 45 minutes, or until the greens are tender.
  8. Serve hot.

Notes:

Calories are based on 4 slices of turkey bacon.
