Egg Casserole

Ingredients:

Eggs

  • 27 eggs
  • 1/4 lb butter
  • 1/2 cup milk
  • 2 tsp salt
  • 1/4 lb sharp cheedar, grated
  • 14 strips bacon
  • 2 small cans sliced mushrooms

White sauce

  • 1/4 cup butter
  • 1/2 cup flour
  • 3-1/4 cups milk
  • 1/3 cup sherry

Instructions:
  1. Mix the eggs, 1/4 lb butter (melted), 1/2 cup milk, and 2 tsp salt and lightly scramble (in multiple batches if necessary)
  2. Cook the bacon
  3. Mix the white sauce and add the 2 cans mushrooms
  4. Crumble the bacon into the sauce
  5. grease a 9X13 casserole pan and layer 1/2 the eggs, 1/2 the white sauce, and 1/2 the cheese
  6. Repeat the layers with the second half of all the items
  7. refridgerate overnight
  8. preheat oven to 250 degrees F
  9. Bake uncovered for 50 minutes
