Mac and Cheese with Hot Italian Sausage

Ingredients:
  • 8 oz elbow macaroni (or other pasta)
  • 3 tbsp butter
  • 3 tbsp flour
  • 1/2 tsp salt
  • fresh ground black pepper to taste
  • 1-1/2 cups milk
  • 6 oz (about 1.5 cups) grated sharp cheddar cheese (divided)
  • 3 links hot Italian sausage (either turkey or regular)
  • 2 tbsp bread crumbs (or crumbled potato chips)

Instructions:
  1. Preheat oven to 350 degrees F.
  2. Cook the pasta according to directions until it is al dente. Drain and set aside.
  3. Remove the casing from the sausage, crumble, and brown. Drain any fat. Set aside.
  4. Melt butter and remove from heat
  5. Stir in flour and seasonings
  6. Gradually add milk, stirring until well mixed
  7. Cook over low heat, stirring constantly until thickened and smooth
  8. Cook for 5 minutes longer, then add 4 oz (one cup) of the cheese and stir util smooth and welll blended
  9. Add the cooked sausage and mix thoroughly
  10. Grease a 8 x 8 square pan and add the pasta. Pour in the cheese sause and mix thoroughly.
  11. Top with the remaining cheese and sprinkle with bread crumbs.
  12. Bake for 30 minutes, then remove and let stand 10 minutes before serving.

Notes:

You can try to make this with sweet Italian sausage as well.

Omit the sausage for standard Mac and Cheese
