Ingredients:
- 2 tbsp butter
- 3.75 cups frozen sweet corn kernels (that's the size of the Wegmans bag, but you can use up to 4 cups without changing anything else)
- 4 tbsp Duke's mayo
- 4 tbsp Sour cream
- Juice of 1 lime
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp cayenne pepper (optional)
- 2 oz Cojita cheese, grated (equal to 1/2 cup)
- 1/4 cup cilantro or green onions
Instructions:
- Melt the butter in a skillet over medium-high heat
- Add corn and cook until just heated through, stirring often
- Stir in the mayo, sour cream, lime juice, chili powder, and optional cayenne pepper and mix well
- Add half of the cheese, stirring until melted
- Sprinkle the top with the remaining cheese and garnish with the cilantro or green onions
Notes:
You can use light Duke's mayo and light sour cream to reduce the calories to 222 without sacrificing flavor.
