Mexican Street Corn

Ingredients:
  • 2 tbsp butter
  • 3.75 cups frozen sweet corn kernels (that's the size of the Wegmans bag, but you can use up to 4 cups without changing anything else)
  • 4 tbsp Duke's mayo
  • 4 tbsp Sour cream
  • Juice of 1 lime
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp cayenne pepper (optional)
  • 2 oz Cojita cheese, grated (equal to 1/2 cup)
  • 1/4 cup cilantro or green onions

Instructions:
  1. Melt the butter in a skillet over medium-high heat
  2. Add corn and cook until just heated through, stirring often
  3. Stir in the mayo, sour cream, lime juice, chili powder, and optional cayenne pepper and mix well
  4. Add half of the cheese, stirring until melted
  5. Sprinkle the top with the remaining cheese and garnish with the cilantro or green onions

Notes:

You can use light Duke's mayo and light sour cream to reduce the calories to 222 without sacrificing flavor.
