Cheddar Cheese Sauce


Ingredients:
  • 3 tbsp butter
  • 3 tbsp flour
  • 1/2 tsp salt
  • fresh ground black pepper to taste
  • 1-1/2 cups milk
  • 4 oz (about 1 cup) grated sharp cheddar cheese (can also use smoky cheddar)

Optional:

  • 3 scallions, sliced
  • 1 tsp butter

Instructions:
  1. Melt butter and remove from heat
  2. Stir in flour and seasonings
  3. Gradually add milk, stirring until well mixed
  4. Cook over low heat, stirring constantly until thickened and smooth
  5. Cook for 5 minutes longer, then add cheese and stir util smooth and welll blended
  6. If you are adding scallions, sautee them in the 1 tsp butter and add to finished sauce

Notes:

This is a great basic cheese sauce that goes with pretty much anything where cheese is good. I made it for broccoli, but the next day I put it on a chicken breast for a sandwich. It also makes a good base for Macaroni and Cheese.
